The Great Food Blogger Cookie Swap 2012

I recently chose to participate in The Great Food Blogger Cookie Swap.
You can read all about it if you’d like, but the general gist is:
- Bake 3 dozen cookies
- Send 1 dozen cookies to 3 different people
- Receive cookies from 3 different people (1 dozen each)
Fun, right?
Even more fun is that a portion of proceeds go to a charitable organization and it’s all backed by OXO as an awesome sponsor.
And now for the details!
I concocted a recipe I call Strawberry Cheesecake Sandwich Cookies:
It’s a chewy honey cinnamon graham flavored cookie studded with dried strawberries and white chocolate chunks sandwiched to a partner with a tangy marshmallow cream cheese filling.
Want to make some? Here’s the deal:
Cream:
1 stick butter
3 Tbsp powdered honey
1 cup brown sugar
Add:
1 egg
2 tsp vanilla bean paste
1 Tbsp cinnamon
Once incorporated, add:
1 3/4 cups flour
1/2 tsp baking soda
1/2 tsp baking powder
As a final step, quickly fold in:
3/4 cup dried strawberries, chopped
3/4 cup white chocolate, chopped (or chips)
I used a small cookie scoop, dropped onto parchment lined sheets and bake in a 300 degree oven for 20 minutes.
For the filling
Cream together equal parts marshmallow fluff and cream cheese
Add a bit of lemon and vanilla extract to taste.
Once cookies are cool, squirt some filling on one 1/2, then sandwich with another cookie and you’re done!
In addition to sampling the cookies I baked and sent, I received cookies from the following folks:

Buckwheat Cocoa Nib Shortbread Cookies from Rosie @ forkpenmouth.wordpress.com. These were really inventive, delicious, and PACKED with superfood ingredients. The packaging with the whole vanilla bean and soft fabric remnants was on point with a natural, feel good presentation.

Red Velvet Shortbread Cookies from ??. I am SO sorry, but I misplaced the business card that was packaged with these!
