Caramel Apple Pie with Applejack Crust
Inspired by The Pioneer Woman
Same general commentary as the Pumpkin Pie on the recipe.
I used Alton Brown’s pie crust which is a real winner.
I didn’t trust my gut on the innards and I’m sorry I didn’t.  The concept is great, but if you’re using a good apple I am adamantly against adding liquids to the mix.  PW tells you to add lemon juice and a fair amount of butter in the topping which will drip down as liquid. 
There’s no reason for lemon juice if you’re making this with a good, tart apple, and be smart about the topping.  Her proportions aren’t nearly as crumbly/toasty as I’d like, and the use of store bought caramel topping is/was like making your own pizza from scratch, then topping it with Kraft Cheese Singles.  Don’t do it.  Make your own caramel.  It’s simple and so much more delicious.
