Thanksgiving Leftovers, Pt 2: Thanksgiving...
They’re really, truly all gone now! Whew!
Thanksgiving Fritatta
Chopped turkey was added to sauteed onions, bell peppers and a few baby potatoes. A leftover cornmeal roll was chopped and whisked up with eggs and a bit of water and then poured into the pan. Topping is crumbled leftover stuffing and a generous sprinkle of feta cheese (leftover from the salad).

Curried Turkey Pot Pie
Leftover turkey meat & mashed potatoes were quickly sauteed with a bunch of kale, carrots, onions, some green pepper, and a bag of frozen peas, seasoned generously with curry powder, a dash of milk added to thin the mixture and then it was all topped with the other 1/2 of the pie crust from my apple pie.
